The Secret Is in the Masala

At the heart of Kadiri’s biryani is a masala recipe so closely guarded it’s practically family folklore. Only five members of the Kadiri family know it, and, as they like to joke, they’re never allowed to travel or even be in the same building together — just in case.

Every spice is roasted fresh in-house, ground by hand, and blended under the direct supervision of Jamal Kadiri himself — who, even after five decades, still calls himself “a chef first.” He and his son personally make the spice blends, refusing to hand that task over to anyone else.

As Jamal says with a smile, “I can’t say my biryani is famous — I just cook. You decide whether it’s good or not.”

Layered With Care

A Kadiri’s biryani isn’t just cooked — it’s constructed. Fluffy basmati rice is layered with tender meat — chicken, lamb, or sometimes goat — and the signature masala. A final layer of rice seals in the aroma, creating a pot where the spices infuse deeply as the dish cooks.

And then there’s the flourish that regulars insist on: crispy fried onions scattered generously over the top, along with a whisper of saffron, which gives the rice a golden hue and subtle floral note.

Biryani has always been considered the imperial dish of India — a celebration food, rich in flavour and ceremony. Kadiri’s honours that tradition but puts its own stamp on it: a balance of East African warmth and Indian depth, perfected over decades and served without pretension.

It’s been the centrepiece of family gatherings, the thing regulars miss most when they move away, and the dish newcomers are told they must try on their first visit. It’s the reason the restaurant has been able to stay true to itself for fifty years: no gimmicks, no shortcuts, just a dish done properly.
